I brine it first, using a brine based off of Alton Brown's, (Good Eats Roast Turkey Recipe : Alton Brown : Food Network) then cook it low and slow. Turkey legs take about 3 hours, a whole turkey a lot longer. I'm sure you can brine or marinade chicken too. Trust me it helps.
