I don't have diabetes, but I have had to adjust my diet due to high blood pressure and cholesterol. My wife has been a great help in keeping the meals varied and keeping me from getting bored. I'm sure there are some resources out there for you. Maybe you should google "diabetic recipes" and see what comes up?
